White tea is originated in Fuding, Fujian, China, also known as Fuding White Tea. The planting history that can be verified so far has more than 800 years. White tea was recorded in ‘Tea Classic(茶经)’ by Luyu(陆羽), the Sage of Tea, that there are white tea mountains in three hundred miles east of Yongjia county.--it is sea in three hundred miles east of Yongjia. It should be south of Yongjia, that is Fuding, origin of white tea.
The processes of white tea only adopt withering and drying. White tea is handpicked before the tea plant’s leaves and buds open fully, and then quickly and meticulously dried under the sun. It is neither rolled nor fired, so it is essentially non-oxidized and least processed. This minimal processing makes much less oxidation occurs, maximize preserve the natural #nutrition of tea, results in the most delicate and freshest tea available.
The white tea is divided into four categories according to the tenderness of the buds and leaves, which are: Silver Needle (Baihao Yinzhen), White Peony (Bai Mudan), Gongmei, and Shoumei.
Silver Needle (Baihao Yinzhen): Amongst white teas, this is the most expensive variety and the most prized, as only top buds (leaf shoot) of the camellia sinensis plant are used to produce the tea, and about 30000 buds can only make out 0.5kg finished Silver Needle tea. Genuine Silver Needles come from the Fujian province of China and is cultivated from the original varieties of Da Bai (Large white) tea plant.
The finished Silver Needle (Baihao Yinzhen) is covered with obvious and abundant of tiny fine white hairs, and shaped like a needle, hence the name.
Its umami taste is strong, the fragrance is obvious. The tea soup is light yellow, elegant and refreshing, be identified as superfine among white teas, also known as the "King of White Tea" and is very valuable for collection.
White Peony (Bai Mudan): White peony is made from one bud and one leaf or one bud and two leaves of Fuding Dabai and Dahao tea plants. The tenderness is second only to Baihao Yinzhen. Because of its green leaves and bud with white hairs, when brewing, the tender bud is surrounded by the leaves, like a just opened flower, so named "White Peony".
White Peony not only has a fragrant and sweet taste that is similar to Baihao Yinzhen, but also has jujube fragrance as Shoumei. The tea soup is clear in color of apricot or orange, with the richest mouthfeel among the white teas, also is the one with the highest cost performance.
Gongmei: Gongmei is made from the young shoots of vegetable tea plant (commonly known as native tea). The plucking standard is one bud, two leaves or three leaves.
The tea soup is orange-yellow, with a high sweetness and strong taste. And special aromas such as honey and fruit will appear during the later transformation process. Best taste over 7 years old.
Shoumei: Shoumei is made from the leaves of Fuding Dabai and Fuding Dahao tea plants. The plucking standard is relatively simple compared with other white teas. It requires tender and fat leaf, the shoots and leaves together with stem, no elder stems, the whole leaf like a longevity eyebrow.
The tea soup is orange, with a pronounced and long-lasting fruity (jujube fragrance) and floral flavor, be identified as the most economic and popular white tea. We recommend this tea as your daily consumption tea.
